Roasted Fish
Today we’ve decided to eat roasted fish. I’ve been thinking about eating fish for two days but only today we had some free time at noon, so we decided to go to a fish restaurant.
Long story short, my husband got an emergency called, had to receive a patient and the three hours that were available to us were shortened to an hour.
I wasn’t going to pass the fish meal and while he was treating his patient, I went to the fish store nearby our house and bought two clean fresh Tilapia fish.
A fresh fish shop close to my house is truly a privilege. Before this store opened I would buy a large quantity of fish and freeze it. And the idea of freezing fresh food or fish for that matter seemed strange to me considering that I preferred to eat fresh food. So now that the fish are available and fresh I find myself at least twice a week visiting the store buying exactly what we plan to cook that day. Fresh!
Anyhow, since time has shortened and my hubby was getting very hungry, I have decided to roast the fish in the oven just as I intended to order in the restaurant, and this is the fastest way I know, without frying and healthier.
I asked the fishmonger to open the fish in the middle, like a book.
I heated the stove to a high heat (200 Celsius), put the fish skin down on a baking sheet. Sprinkled some olive oil, coarse salt, coarsely ground black pepper, a little paprika, crushed garlic, garlic cut into slices and spread some thyme leaves.
After about twenty minutes (time depends on the oven and the roasted level you like), the fish was ready, crispy from the bottom and soft and juicy on top.
I squeezed a lemon and served with roasted potatoes and sweet potatoes. Green Salad Lettuce, onion, and crushed garlic, lemon, salt, and pepper.
Easy work, tasty and nutritious food and tell you the truth? The price was less than a quarter of what we would have pay in a restaurant. We were full and happy.
